It's not even mind over matter - it's spirit over body - and that's the ultimate struggle! I have, though, seen incredible response by God to prayers during fasting times in my life. God honors fasting in ways that we often never attempt to tap into. So I am praying for you and do pray that God touches your heart & life in a special way and gives you peace. Fasting is tough.
